For acini de pepe, the positions of measurement for thicknesses are the distances between cuts at the pasta’s center. Measurements are taken using precision digital calipers and further verified by weight.
In addition to piece-per-gram weight verification's, the outside diameters of acini de pepe are measured along their thicknesses, as placed parallel within the jaws of precision digital calipers.
Because acini de pepe are small semi-spherical shapes symmetrical across two or more axes, the only required measurements widths and thicknesses.
To assure specified moisture, two batch samples are ground, weighed, heated in an air oven, placed in a desiccator and then re-weighed. Results are validated using two moisture validation machines.
